Sea urchins
Scientific name : Paracentrotus lividus
Origin : Mediterranean and north-east Atlantic
The product
Sea urchins live on algae-covered rocks and stones, sea grass and on the sea bed. They can be found in coastal areas at 30 metres depth.
Sea urchins are generally harvested by snorkelling. "Gourmets" enjoy the sophisticated, iodine-flavoured taste of these coral-yellow or orange eggs, which have been dubbed the "caviar of the sea". Sometimes there is even an after-taste of orange.
Season
Production begins in October and lasts about six months.
Clams
Scientific name : Ruditapes philippinarum
Origin : Mediterranean
The product
Clams live on shallow, sandy sea beds near the coast (sea and pond). They are gathered on foot or by snorkelling. Equipment used includes rakes, dredgers, clam tongs and clam forks.
Clams are particularly sought-after by seafood-lovers and can be eaten hot or cold in many forms : raw, cooked, stuffed, with spaghetti, and so on.
Season
Even though the best quality is to be found between October and May, clams can be eaten all year long. Their availability depends on weather conditions, which govern when they can be harvested.
Sea squirt
Scientific name : Microcosmus sabatieri
Origin : Mediterranean
The product
Sea squirts, also known as sea violets or more properly as ascidians, live on rocky, sandy and muddy sea beds. They stick themselves to rock, stones and shells. They are harvested by hand, divers or trawlers.
Their bright-coloured flesh and characteristic iodine taste make this Mediterranean seafood its high price.
Season
Sea squirts can be eaten all year long. They are more fragile during their reproduction period between April and May.
Bean Clams
Scientific name : Donax trunculus
Origin : Mediterranean
The product
Bean clams, which have various local names such as tenille, tenil and donace, live on fine sandy coastal sea beds in shallow water.
They are gathered by standed fishers who harvest using a kind of rake known as a tellinier.
This highly sought-after Mediterranean delicacy is generally opened into a pan on a hot ring with garlic and parsley, it can be eaten hot or cold. Bean clams are a refined and tasty type of seafood.
Season
Bean clams are available all year round. They are perfect for serving with "apéritifs" and many people especially enjoy them in summer.
